On Wednesday we had another successful day in the course room, our Weed Walk Course was producing some wonderful smells from the kitchen. Herb Fritters, Chickweed Pesto, Weed Quiche, Nettle Soup to name a few, the participants were also taught some of the many medicinal purposes associated with many weeds, this was thoroughly enjoyed by all, see below for the Chickweed Pesto recipe “yummy”!
Mince 2 cloves of garlic, 2-3 cups of fresh chickweed (dry), 1/2 cup walnuts, 1/4 – 1/2 cup of olive oil, 1/4 cup of freshly grated parmesan cheese, dash of salt.
Blend together in a food processor. Can use a blender if you chop the chickweed first.
Enjoy on crackers, pasta, in sandwiches, with scrambled eggs etc.,
